Baked Halibut Fillets with Garlic and Chopped Celery

This one is easy. Halibut, a flatfish, has a succulent taste, needs little embellishment, but packs a host of health benefits: An abundance of omega-3 fatty acids, folic acid, vitamin B6 and vitamin B12 are just a few. Use avocado oil and you’re using the fruit with the most nutrients of all. Then spice the flavor with lime juice, garlic, and celery, bake for 10 minutes, and watch the satisfied faces. No way does this fish dish do anything but taste fabulous.



4 halibut fillets (about 1 pound)

2 tablespoons avocado oil

1/8 teaspoon rosemary

1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon lime juice

1 onion, thinly sliced

1 celery stalk, coarsely chopped

1/4 garlic, minced



Preheat oven to 375 degrees. Arrange fish fillets in a casserole dish in a single layer. Coat fish with 1 tablespoon of oil and season with rosemary, salt, and pepper. Pour lime juice over halibut. Toss onion, celery and garlic with remaining avocado oil then scatter on top of fish. Bake for 10 minutes, until cooked thoroughly.
